Prepare the Garlic
Preheat your oven to 400°F (200°C). Take the garlic cloves and slice the tops off each clove to expose the garlic. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil.

Prepare the Baguette
While the garlic is roasting, slice the baguette into thin rounds. Arrange the slices on a baking sheet and brush lightly with the remaining tablespoon of olive oil. Season with salt and pepper.

Toast the Bread
Place the baking sheet in the oven during the last 10 minutes of roasting the garlic to toast the bread until golden brown.

Prepare the Prosciutto and Brie
Remove the roasted garlic from the oven and let it cool slightly. Squeeze the softened garlic out of the skins into a small bowl and mix with a pinch of salt and pepper. Spread this mixture on the toasted bread slices.

Add Brie and Prosciutto
Slice the Brie cheese and layer it over the garlic spread on the toasted bread. Top each slice with a piece of prosciutto.

Create the Pickled Board
On a large serving board, arrange the toasted prosciutto and Brie toasts, fresh fruit, mustard seeds, and a small bowl of compote. Drizzle a bit more olive oil over the entire board if desired.
