Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking.

    Drain the Pasta

    Once cooked, drain the pasta in a colander and set aside, reserving a cup of the pasta water for later use.

Preparing the Vegetables

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the bell peppers, zucchini, carrot, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.

    Add Spinach

    Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.

Combining Everything

    Mix Pasta with Vegetables

    Add the drained pasta to the skillet with the sautéed vegetables. Toss gently to combine.

    Add Sauce Ingredients

    Pour in the lemon juice, salt, and black pepper. If the mixture seems dry, add a little reserved pasta water to achieve desired consistency.

    Finish with Cheese

    Sprinkle the grated Parmesan cheese over the pasta and toss once more until everything is well combined. Adjust seasoning if necessary.
