    Prepare the Coatings

    In three separate shallow bowls, set up a breading station. In the first bowl, place the flour. In the second bowl, beat the eggs until well combined. In the third bowl, mix the breadcrumbs, garlic powder, dried oregano, salt, and black pepper.

    Bread the Mozzarella Sticks

    Take each mozzarella stick and coat it in the flour, shaking off any excess. Then dip it into the beaten eggs, ensuring it's fully coated. Finally, roll it in the breadcrumb mixture, pressing gently to adhere. Repeat this process with all the mozzarella sticks.

    Chill the Coated Sticks

    Once all the sticks are breaded, place them on a baking sheet and freeze for at least 30 minutes. This step helps to keep the cheese from melting too quickly during frying.

    Heat the Oil

    In a large, deep pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature or drop a breadcrumb into the oil; if it sizzles, the oil is ready.

    Fry the Mozzarella Sticks

    Carefully add the frozen mozzarella sticks to the hot oil in batches, frying them for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.

    Cook the Marinara Sauce

    In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.

    Add the canned crushed tomatoes, dried basil, salt, black pepper, and sugar to the saucepan. Stir well to combine.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally. This will allow the flavors to meld together.

    Serve

    Once the sauce is ready and the mozzarella sticks are fried, serve the mozzarella sticks hot with the marinara sauce on the side for dipping.
