Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well-coated. Cover and refrigerate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F or 190°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and discard the marinade. Place the salmon fillets skin-side down on the hot grill. Grill for 5-7 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and trim the asparagus. Cut the bell peppers into strips and slice the zucchini into rounds.

  2. 5

    Season the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper until evenly coated.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for 4-6 minutes, turning occasionally until they are tender and have grill marks.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon with a generous portion of the seasonal vegetables on the side.
