Prepare the Salad Base
Rinse and dry the mixed greens thoroughly. Cut the cherry tomatoes in half, and slice the cucumber and red onion thinly.

Prepare the Chicken
Pat the chicken breasts dry with paper towels. Rub olive oil, garlic powder, salt, and black pepper over the chicken breasts.
Grilling the Chicken

Grill the Chicken
Preheat the grill to medium-high heat. Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C). Remove from heat and let rest for 5 minutes before slicing.
Preparing the Vinaigrette

Mix the Vinaigrette
In a small bowl, whisk together 3 tablespoons of olive oil, balsamic vinegar, Dijon mustard, and honey. Season with salt and black pepper to taste.

In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Top with sliced grilled chicken and drizzle with the vinaigrette. Toss gently to combine before serving.
