Filet Mignon

Yukon Gold Smashed Potatoes

Grilled Asparagus

Method

Filet Mignon

  1. 1

    Prepare the Steak

Take the aged filet mignon out of the refrigerator and let it come to room temperature for about 30 minutes before cooking. This ensures even cooking.

  2. 2

    Season the Steak

Rub olive oil over the steak, then season generously with salt, black pepper, and fresh rosemary on both sides.

  3. 3

    Cook the Steak

Heat a skillet over medium-high heat. Once hot, add the seasoned filet mignon and sear for 4-5 minutes on each side for medium-rare, adjusting the time according to your desired doneness.

  4. 4

    Rest the Steak

Remove the steak from the skillet and let it rest on a cutting board for 5 minutes before slicing.

Yukon Gold Smashed Potatoes

  1. 5

    Boil the Potatoes

Peel and chop the Yukon Gold potatoes into quarters. Place them in a pot, cover with water, and add a pinch of salt. Bring to a boil and cook until fork-tender, about 15-20 minutes.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, garlic powder, salt, and black pepper. Use a potato masher to smash the potatoes to your desired consistency.

Grilled Asparagus

  1. 7

    Prepare the Asparagus

Wash the asparagus and trim the woody ends off. Pat dry with a paper towel.

  2. 8

    Season the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

  3. 9

    Grill the Asparagus

Preheat the grill to medium-high heat. Place the asparagus directly on the grill grates and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred.
