Cook the Pasta
In a large pot, bring water to a boil and add a pinch of salt. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced mushrooms and sauté until they begin to brown, about 5 minutes. Add the diced bell peppers, chopped green onions, and diced tomatoes. Cook for an additional 5-7 minutes, stirring occasionally.

Prepare the Garlic Butter Sauce
In a small saucepan, melt 4 tablespoons of butter over medium heat. Add 4 cloves of minced garlic and 1/2 cup of white wine. Allow the mixture to simmer for 2-3 minutes, then remove from heat.

Combine Everything
Add the cooked penne pasta to the skillet with the sautéed vegetables. Pour the garlic butter sauce over the top and gently toss to combine. Season with salt and pepper to taste.

Serve
Serve the veggie pasta hot, optionally garnished with additional green onions and grated Parmesan cheese. Pair with garlic toast.
