Cook the Sausage
In a large skillet over medium heat, add the olive oil. Once hot, add the Andouille sausage slices and cook until browned, about 5 minutes.

Add the Peppers
Stir in the diced red and green bell peppers into the skillet with the sausage, cooking until the peppers are tender, about 3-4 minutes.

Cook the Shrimp
Add the shrimp to the skillet, sprinkle with Cajun seasoning, and cook until the shrimp turn pink and opaque, about 3-5 minutes.

Make the Cajun Cream Sauce
Pour in the heavy cream, stirring to combine. Allow it to simmer for another 2-3 minutes, and adjust seasoning with salt and black pepper as needed.

Spoon the grits onto plates and top generously with the shrimp and sausage mixture. Garnish with chopped scallions before serving.
