    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Breading

    In a mixing bowl, combine flour, cornstarch, salt, black pepper, and garlic powder.

    Soak in Buttermilk

    Place the calamari rings in another bowl and cover them with buttermilk. Let them soak for about 15 minutes.

    Coat the Calamari

    Remove the calamari from the buttermilk, letting excess drip off, then toss them in the flour mixture until evenly coated.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil, frying in batches until golden brown and crispy, about 2-3 minutes per batch.

    Drain and Serve

    Remove the fried calamari from the oil and drain on paper towels. Sprinkle with Parmesan cheese and serve hot with Thai chili sauce on the side.
