Prepare the Redfish
Preheat a skillet over medium-high heat. While the skillet heats up, rub the redfish fillets evenly with olive oil and coat with blackening seasoning.

Cook the Fish
Once the skillet is hot, place the seasoned redfish fillets in the skillet. Cook for about 3-4 minutes per side, or until the fish is cooked through and has a blackened crust.

Prepare the Sandwich
While the fish is cooking, slice the tomato. Once the fish is done, remove it from the skillet and let it rest for a minute. Toast the sandwich buns lightly if desired.

Assemble the Sandwich
On the bottom half of each bun, place lettuce leaves, followed by the blackened redfish fillet, sliced tomato, and a generous amount of tartar sauce. Top with the other half of the bun.
