    Prepare the Garlic Butter

    In a small bowl, mix softened butter with minced garlic and chopped parsley. Set aside.

    Season the Filet Mignon

    Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.

    Sear the Steaks

    In a large skillet, heat olive oil over medium-high heat. Add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, adjusting time depending on desired doneness.

    Add Garlic Butter

    In the last minute of cooking, add the garlic butter on top of the steaks. Allow it to melt and baste the steaks with the melted butter.

    Cook the Smashed Potatoes

    Boil potatoes until tender, then drain and smash them gently with a fork or potato masher. Add butter, salt, and pepper to taste.

    Prepare Seasonal Vegetables

    In the same skillet, add the seasonal vegetables and sauté for about 5-7 minutes until tender. Season with salt and pepper.

    Plate the filet mignon alongside smashed potatoes and sautéed seasonal vegetables. Top the steak with additional garlic butter if desired.
