Lobster Stock Preparation

Prepare the Lobster Stock
In a large pot, combine the lobster shells, onion, carrots, celery, garlic, thyme, bay leaves, and water. Bring to a boil, then reduce the heat and let simmer for 1 hour. Strain the stock through a fine mesh sieve and set aside.

In a small saucepan, heat the olive oil over low heat. Add the curry powder and stir until fragrant, about 2-3 minutes. Remove from heat and let cool. Strain if desired and set aside.
