Prepare the Pineapple
Peel, core, and chop the fresh pineapple into small chunks. You should have about 2 cups of pineapple pieces.

Juice the Lime
Squeeze the lime to extract the juice. Adjust the quantity according to your taste preference.

Muddle the Mint
In a mixing glass, add the fresh mint leaves. Use a muddler or the back of a spoon to gently press the mint leaves to release their oils.

Combine Ingredients
In a large pitcher, combine the muddled mint, chopped pineapple, lime juice, and agave syrup or honey. Stir well to mix all the ingredients.

Add Tonic Water
Slowly pour in the tonic water and gently stir to combine. Be careful not to over-stir as you want to keep the fizz.
Serving

Serve the Fresca
Pour the Pineapple Fresca into glasses filled with ice. Garnish each glass with a slice of lime and a sprig of mint.
