Method

Preparing Duck Breast

    Using a sharp knife, lightly score the skin of the duck breast in a crosshatch pattern, being careful not to cut into the meat.

    Rub the scored duck breasts with salt and black pepper, ensuring they are evenly coated.

    Pan-Roast the Duck

    Place the duck breasts skin-side down in a cold, dry skillet. Turn the heat to medium and render the fat for about 6-8 minutes until the skin is crispy and golden brown. Flip and cook for an additional 4-5 minutes for medium-rare. Remove from heat and let rest.

Making Apple Cider Reduction
