Preparing the Custard

Heat the Cream
In a medium saucepan, heat 2 cups of heavy cream over medium heat until it begins to simmer. Do not let it boil.

Mix Egg Yolks
In a mixing bowl, whisk together 6 egg yolks, 1 cup of granulated sugar, 1 tablespoon of pure maple syrup, 1 teaspoon of vanilla extract, and a pinch of salt until the mixture is smooth and pale in color.

Combine Mixtures
Slowly pour the heated cream into the egg yolk mixture while continuously whisking to temper the eggs. This will prevent them from scrambling.

Strain the Mixture
Pass the custard mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps or cooked egg bits.

Prepare the Ramekins
Preheat your oven to 325°F (160°C) and place 6 ramekins in a baking dish. Carefully fill each ramekin with the custard mixture until about three-quarters full.

Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the center is still slightly jiggly. Remove from the oven and let cool.

Once cooled to room temperature, refrigerate the ramekins for at least 4 hours, or overnight for best results.
Caramelizing the Sugar

Prepare for Caramelizing
Remove the chilled ramekins from the refrigerator. Sprinkle 1 tablespoon of granulated sugar evenly on top of each custard.

Caramelize the Sugar
Using a kitchen torch, carefully caramelize the sugar until it forms a golden brown crust. If you don’t have a torch, you can place the ramekins under a broiler for 1-2 minutes, watching closely to prevent burning.
