Grilled Norwegian Salmon

Method

Grilled Norwegian Salmon

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, minced garlic, lemon juice, chopped dill, salt, and black pepper. This will be your marinade.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Make sure each fillet is well-coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Preheat the Grill

Preheat your grill to medium-high heat.

  4. 4

    Grill the Salmon

Remove the salmon from the marinade and place it directly on the grill. Grill for about 5-7 minutes on each side, or until the salmon flakes easily with a fork.

Lobster Saffron Risotto

  1. 5

    Prepare the Broth

In a saucepan, heat the broth and keep it warm over low heat.

  2. 6

    Sauté the Aromatics

In a large skillet, melt 2 tablespoons of butter over medium heat. Add the shallots and garlic, sautéing until they are translucent.

  3. 7

    Toast the Rice

Add the Arborio rice to the skillet and stir for about 1-2 minutes until the rice is lightly toasted.

  4. 8

    Add Wine and Saffron

Pour in the white wine and add the pinch of saffron. Stir continuously until the wine is mostly absorbed.

  5. 9

    Incorporate Broth Gradually

Begin adding the warm broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the broth before adding more. Continue this process for about 18-20 minutes or until the rice is creamy and al dente.

  6. 10

    Finish the Risotto

Stir in the chopped lobster meat, grated Parmesan cheese, salt, and pepper. Cook for another 2-3 minutes until heated through.

Lobster Beignet

  1. 11

    Prepare the Batter

In a mixing bowl, combine all-purpose flour, baking powder, salt, and black pepper. In another bowl, whisk together the beaten egg and milk. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

  2. 12

    Add Lobster

Gently fold in the chopped lobster meat into the batter until evenly distributed.

  3. 13

    Heat the Oil

In a deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  4. 14

    Fry the Beignets

Using a spoon, drop small amounts of batter into the hot oil. Fry until golden brown on all sides, about 3-4 minutes. Remove with a slotted spoon and drain on paper towels.
