For the Grilled Branzino

Method

Prepare the Grilled Branzino

    Clean the Fish

    Rinse the branzino under cold water, clean the insides, and pat dry with paper towels.

    Marinate the Fish

    In a bowl, mix olive oil, lemon juice, minced garlic, thyme, salt, and black pepper. Rub this mixture all over the fish and inside the cavity. Let it marinate for at least 30 minutes.

    Preheat the Grill

    Preheat your grill to medium-high heat (around 400°F or 200°C).

    Grill the Fish

    Place the branzino on the grill and cook for about 6-8 minutes on each side, or until the fish flakes easily with a fork and has nice grill marks.

Prepare the Zucchini and Relish

    Sauté the Zucchini

    In a pan, heat 1 tablespoon of olive oil over medium heat. Add the sliced zucchini and sauté for 4-5 minutes until tender. Season with salt and pepper to taste.

    Make the Olive and Caper Relish

    In a mixing bowl, combine chopped Gordal olives, capers, red onion, fresh parsley, and red wine vinegar. Mix well and season with salt and pepper to taste.

Serve

    Plate the Dish

    On a serving platter, place the grilled branzino and top it with the sautéed zucchini. Spoon the olive and caper relish over the fish.

    Garnish and Enjoy

    Garnish with extra fresh parsley if desired. Serve immediately and enjoy your grilled branzino!
