Method

Prepare Bison Tenderloin

    Season the Tenderloin

    Rub the bison tenderloin with olive oil, garlic powder, salt, black pepper, and chopped fresh rosemary evenly across all sides.

    Grill the Tenderloin

    Preheat your grill to high heat. Once hot, place the seasoned bison tenderloin on the grill and cook for 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from grill and let rest for 5-10 minutes before slicing.

Prepare Crispy Polenta

    Cook Polenta

    In a saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt, then slowly whisk in the polenta. Cook over low heat, stirring frequently until thickened (about 15-20 minutes).

    Add Cheese and Butter

    Remove from heat and stir in the Parmesan cheese and butter until fully melted and combined. Spread the polenta into a greased baking dish and let it cool completely.

    Slice and Fry Polenta

    Once cooled, cut the polenta into desired shapes (squares or triangles). Heat olive oil in a skillet over medium-high heat and fry the polenta pieces until golden and crispy on both sides (about 3-4 minutes each side).

Grill Peppers

    Prepare the Peppers

    Cut the jalapeño and poblano peppers in half lengthwise and remove seeds. Brush each half with olive oil and season with salt and black pepper.

    Grill the Peppers

    Place the peppers on the grill and cook for about 5-7 minutes, turning occasionally until they are tender and have nice grill marks.
