Grilled Beef Tenderloin

Prepare the Beef
Bring the beef tenderloin to room temperature. Pat it dry with paper towels.

Preheat the Grill
Preheat your grill to high heat.

Grill the Beef
Place the tenderloin on the grill and cook for about 6-8 minutes per side for medium-rare, or until desired doneness.

Rest the Beef
Remove the tenderloin from the grill and let it rest for 10 minutes before slicing.
Veal Sweetbread

Prepare the Sweetbread
Soak the veal sweetbreads in cold water for 1-2 hours, then drain and rinse.

Blanch the Sweetbread
In a pot of boiling water, blanch the sweetbreads for about 5 minutes. Remove and let cool.

Prepare the Empanadas
Take one piece of empanada dough, place a spoonful of filling in the center, and fold in half. Press the edges to seal and crimp with a fork.

Bake the Empanadas
Preheat the oven to 375°F (190°C). Arrange the empanadas on a baking sheet and bake for 20-25 minutes, until golden brown.
Argentine Chimichurri

Combine Ingredients
In a bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, and salt.

Stir the mixture well and let it sit for at least 15 minutes to allow flavors to meld.
