Method

Torte Base

    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.

    Mix Dry Ingredients

    In a large bowl, sift together all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt.

    Combine Wet Ingredients

    In another bowl, whisk together eggs, buttermilk, vegetable oil, vanilla extract, and hot brewed espresso until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.

    Bake

    Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

    Cool the Cake

    Remove the cake from the oven and let it cool in the pan for 10 minutes. Then turn it out onto a wire rack to cool completely.

Mascarpone Filling

    In a large mixing bowl, whip the heavy cream until soft peaks form.

    In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth.

    Gently fold the whipped cream into the mascarpone mixture until fully combined.

    Refrigerate the mascarpone filling for at least 30 minutes before assembling the torte.

Espresso Crème Anglaise

    In a saucepan, combine heavy cream and whole milk. Heat over medium heat until just simmering.

    Whisk Egg Yolks

    In a separate bowl, whisk together granulated sugar and egg yolks until pale and thick.

    Temper Egg Yolks

    Slowly pour the hot cream mixture into the egg yolk mixture, whisking continuously to temper the yolks.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

    Remove from heat, stir in espresso powder and vanilla extract, and let cool before serving.

Chocolate Decor

    In a microwave-safe bowl, melt the dark chocolate in 30-second intervals, stirring in between until smooth.

    Once melted, allow the chocolate to cool slightly, then drizzle or spread it over the cooled torte.

    Finally, dust the top of the torte with cocoa powder for decoration.
