Method
Soup Preparation
- 1
Soak the Beans
Place the Sea Island beans in a bowl and cover them with water. Allow them to soak for at least 8 hours or overnight.
- 2
- 3
Add Beans and Water
Add the drained Sea Island beans to the pot, along with 4 cups of water, bay leaf, thyme, salt, and black pepper. Bring the mixture to a boil.
- 4
Simmer the Soup
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beans are tender. Stir occasionally and add more water if necessary.
- 5
Season and Serve
Once the beans are tender, remove the bay leaf, taste, and adjust seasoning as needed. Serve hot.
Husk-Roasted Corn Preparation
- 6
Prepare the Corn
Preheat your grill or oven to medium-high heat. While it’s heating, rinse the corn and pull back the husks without removing them completely. Remove the silk from the corn.
- 7
Season the Corn
Spread butter on the corn and season it generously with salt and black pepper. Fold the husks back over the corn.
- 8
Roast the Corn
Place the corn directly on the grill or in the oven. Roast for about 15-20 minutes, turning occasionally, until the kernels are tender and slightly charred.
- 9
Serve the Corn
Remove the corn from the grill or oven, allow it to cool slightly, then peel back the husks. Serve warm alongside the Sea Island bean soup.
