Ingredients for Button Mushroom Soup

Method

Directions for Making Button Mushroom Soup

  1. 1

    Prepare the Ingredients

Clean the button mushrooms with a damp cloth and slice them. Peel and finely chop the onion and garlic cloves.

  2. 2

    Sauté the Vegetables

In a large pot, heat the butter and olive oil over medium heat. Once melted, add the chopped onion and garlic. Sauté until the onion becomes translucent, about 5 minutes.

  3. 3

    Cook the Mushrooms

Add the sliced mushrooms to the pot. Cook, stirring occasionally, until the mushrooms release their moisture and begin to brown, about 8-10 minutes.

  4. 4

    Add the Broth

Pour in the vegetable broth and add salt and black pepper. Bring the mixture to a boil, then reduce heat and let it simmer for about 15 minutes.

  5. 5

    Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches and blend until smooth.

  6. 6

    Add Cream and Madeira

Return the blended soup to the pot. Stir in the heavy cream and Bual Madeira. Heat gently without boiling.

  7. 7

    Garnish and Serve

Ladle the soup into bowls and garnish with freshly chopped parsley. Serve warm.
