Add Broth and Seasonings
Return the pork to the pot. Add the chicken broth, cumin, paprika, and bay leaves. Bring to a gentle simmer.

Make the Dough
In a large bowl, mix the flour and salt. Add the cold cubed butter and mix until the mixture resembles coarse crumbs. In a small bowl, whisk together the egg yolks and cold water. Add to the flour mixture and mix until a dough forms.

Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
Chimichurri Sauce

Combine Ingredients
In a medium bowl, combine chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Mix well.

Let It Sit
Allow the chimichurri to sit for at least 15 minutes before serving to let the flavors meld.
Assembling the Empanadas

Roll Out the Dough
On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a round cutter (about 4-5 inches in diameter).

Fill and Fold
Place a tablespoon of shredded pork in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.

Bake the Empanadas
Preheat the oven to 400°F (200°C). Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
