Tartare Preparation

Prepare the Salmon

Finely dice the fresh salmon fillet and place it in a mixing bowl.

Mix the Ingredients

Add lime juice, orange juice, dill, chives, sea salt, and black pepper to the salmon. Gently mix the ingredients until well combined.

Chill

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

Fried Potatoes Preparation

Heat the Oil

In a deep frying pan, heat the vegetable oil to 180°C (350°F).

Fry the Potatoes

Carefully add the potato fries to the hot oil and fry them until they are golden brown and crispy. This should take about 5-7 minutes.

Drain and Season

Remove the fries from the oil and drain them on paper towels. Season with sea salt to taste.

Assemble the Salad

In a serving bowl, combine the arugula and thinly sliced fennel. You can drizzle with a little olive oil and lemon juice if desired.

Plating

Serve

On a plate, place a portion of the salmon tartare, alongside the salad and a generous serving of fries.
