Making the Pastry Dough

Prepare the Dough

In a large bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in cold water, a tablespoon at a time, until the dough comes together. Shape into a ball, wrap in plastic, and refrigerate for at least 30 minutes.

Bake the Dough

Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface to fit your tart pan. Transfer to the pan, trim excess, and prick the bottom with a fork. Bake for 20-25 minutes until golden brown. Let cool.

In a saucepan, heat the milk over medium heat until just boiling. Remove from heat.

In a separate bowl, whisk together sugar, egg yolks, and cornstarch until smooth. Gradually whisk in the hot milk until combined.
