Fondue Preparation
Prepare the Cheese Mixture
Grate the Parmesan and Gruyère cheese and mix them together in a bowl. Set aside.
Prepare the Pot
Rub the inside of a fondue pot with the garlic clove. Discard the garlic.
Heat the Wine
Pour the dry white wine and lemon juice into the fondue pot and heat over medium heat until it is warm but not boiling.
Add the Cheese
Gradually add the cheese mixture to the wine, stirring continuously with a wooden spoon until the cheese is melted and smooth.
Thicken the Mixture
In a small bowl, mix the cornstarch with a bit of wine to create a slurry. Add this to the melted cheese, stirring until thickened.
Season the Fondue
Add nutmeg and black pepper to taste, mixing well.
Serve
Transfer the fondue pot to a heat source and serve with cubes of bread and vegetables for dipping.
