Make the Wonton Chips
Heat the vegetable oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the wonton wrappers in batches. Fry until they are golden brown and crispy, about 2-3 minutes. Remove from oil and place on paper towels to drain excess oil.

Prepare the Garnishes
Chop the green onions and cilantro finely. If using whole kimchi, chop it into smaller pieces. Set aside all garnishes for easy assembly.

Assemble the Loaded Wonton Nachos
Arrange the crispy wonton chips on a large serving platter. Top with your choice of kimchi, sprinkle with green onions, cilantro, and sesame seeds. Drizzle your preferred sauce over the top and serve immediately.
