Bring a pot of water to a boil and cook the udon noodles according to package instructions. Drain and set aside.

Stir-Fry the Vegetables
In a large skillet or wok, heat vegetable oil over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant. Add the julienned carrots, sliced bell pepper, and broccoli florets. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Combine Noodles and Sauce
Add the cooked udon noodles to the skillet with the vegetables. Pour in the soy sauce and sesame oil, tossing everything together to combine. Cook for an additional 2-3 minutes, ensuring the noodles are heated through.

Add Teriyaki Glaze
Drizzle the teriyaki sauce over the noodle mixture and toss to coat evenly. Cook for 1 more minute until the sauce is slightly thickened.
