Prepare the Noodles
Soak the rice noodles in warm water for about 30 minutes or until they are soft. Drain and set aside.

Make the Sauce
In a small bowl, mix together fish sauce, tamarind paste, sugar, soy sauce, and chili powder. Set aside.
Cooking

Cook Tofu and Shrimp
In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the cubed tofu and fry until golden brown. Remove and set aside. In the same pan, add another tablespoon of oil and cook the shrimp until pink and opaque, about 3-4 minutes. Remove and set aside.

Stir-fry Ingredients
Add the remaining tablespoon of oil to the pan. Add minced garlic and cook for about 30 seconds until fragrant. Push garlic to the side and crack the eggs into the pan, scrambling them until cooked through. Add the soaked noodles and pour the sauce over them. Toss everything together for about 2-3 minutes.

Combine with Vegetables
Add the bean sprouts, green onions, fried tofu, and shrimp back into the pan. Stir-fry everything together for another 2 minutes until heated through.
Serving

Plate the Dish
Transfer the Pad Thai to serving plates and garnish with chopped peanuts and fresh cilantro. Serve with lime wedges on the side.
