Method
Preparation
- 1
Soak the Rice
Rinse the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- 2
Prepare the Mango
While the rice is soaking, peel the ripe mangoes and slice them into thin strips. Set aside.
Cooking
- 3
Cook the Rice
Drain the soaked rice and steam it in a bamboo steamer or a metal steamer lined with cheesecloth for about 25-30 minutes, or until tender.
- 4
Make Coconut Sauce
In a small saucepan, combine the coconut milk, sugar, and salt. Heat over low to medium heat until the sugar dissolves completely, but do not let it boil.
- 5
Combine Rice and Coconut Sauce
Once the rice is cooked, transfer it to a mixing bowl. Pour about 3/4 of the coconut sauce over the rice and mix well. Allow it to sit for about 15 minutes to absorb the flavors.
Serving
- 6
Assemble the Dish
To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with the remaining coconut sauce. Garnish with sesame seeds or mung beans, if desired.
