Preparing Tostones

Peel and Slice Plantains
Start by peeling the green plantains. Cut each plantain into approximately 1-inch thick slices.

Heat Oil
In a large frying pan, heat the vegetable oil over medium-high heat until hot but not smoking.

Fry Plantain Slices
Carefully add the sliced plantains to the hot oil in batches. Fry for about 3-4 minutes on each side, or until they are lightly golden.

Remove and Flatten
Remove the fried plantain slices from the oil and place them on a paper towel-lined plate to drain excess oil. Using the bottom of a cup or plate, gently flatten each slice.

Second Frying
Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes or until they are crispy and golden brown.

Season with Salt
Remove the tostones from the oil and place them on a paper towel-lined plate. Sprinkle with salt while they are still hot.
Making Garlic Sauce

Prepare Garlic
Mince the garlic cloves finely and set aside.

Mix Sauce Ingredients
In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Stir well to mix.

Add salt and pepper to the sauce to taste, mixing until well combined.
