Dough Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour and salt until well combined.

    Cut in Butter

    Add the chilled, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

    Combine Wet Ingredients

    In a small bowl, whisk together the egg yolk and cold water.

    Form the Dough

    Gradually add the wet mixture to the flour mixture, stirring until the dough begins to come together. Turn the dough out onto a floured surface and knead gently until smooth.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Filling Preparation

    Cook the Meat

    In a large skillet, heat olive oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are soft.

    Season the Meat

    Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon. Stir in the cumin, paprika, salt, and black pepper. Cook for another 2-3 minutes.

    Cool the Filling

    Remove the skillet from heat and let the filling cool for a few minutes before using.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Use a round cutter to cut out circles of dough.

    Fill the Empanadas

    Place a tablespoon of the meat filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal. Crimp the edges with a fork for a decorative touch.

    Egg Wash

    Brush the tops of the empanadas with the beaten egg for a golden finish.

    Bake

    Arrange the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown.
