Ceviche Preparation
Prepare the Fish
Cut the fresh fish into small, bite-sized cubes, about 1/2 inch in size. Place the fish in a mixing bowl.
Cure the Fish
Pour the fresh lime and lemon juice over the fish cubes. Make sure the fish is fully submerged in the citrus juices. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour, or until the fish appears opaque.

After the fish is cured, remove it from the refrigerator. Add the thinly sliced red onion, chopped cilantro, finely chopped jalapeño, salt, and black pepper to the bowl. Gently mix all the ingredients together until well combined.
