Yuca Fries Preparation

    Prepare the Yuca

    Peel the yuca (cassava) to remove the tough outer skin, then cut it into thick strips resembling fries.

    Boil the Yuca

    In a large pot, bring water to a boil. Add the yuca strips and boil for about 15-20 minutes or until tender. You should be able to easily pierce them with a fork.

    Drain and Cool

    Once cooked, drain the yuca in a colander and let it cool slightly. This will help them firm up before frying.

    Fry the Yuca

    In a deep skillet or pot, heat the vegetable oil over medium-high heat. Once hot, add the yuca strips in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-5 minutes per batch.

    Season

    Remove the yuca fries from the oil and place them on a paper towel-lined plate to absorb excess oil. While still hot, sprinkle with salt to taste.

    Blend Ingredients

    In a blender, combine fresh cilantro, garlic, green chili pepper, lime juice, salt, and water. Blend until smooth. You can adjust the consistency by adding more water if necessary.

    Taste the sauce and adjust the salt or lime juice as desired to suit your taste.
