Prepare the Ingredients
Gather all the ingredients: pisco, fresh lime juice, simple syrup, egg white, and Angostura bitters.

Combine Ingredients
In a cocktail shaker, combine 2 oz of pisco, 1 oz of fresh lime juice, 0.5 oz of simple syrup, and 1 large egg white.

Dry Shake
Secure the lid on the shaker and shake vigorously without ice for about 15 seconds to emulsify the egg white.

Shake with Ice
Add ice to the shaker and shake vigorously again for another 15-20 seconds until well chilled.

Strain the Cocktail
Strain the mixture into a chilled cocktail glass.

Garnish and Serve
Add 2 dashes of Angostura bitters on top of the foam created from the egg white. Serve immediately.
