Prepare the Dough
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and quickly stir in 1 cup of all-purpose flour until a dough forms. Return to low heat for about 1-2 minutes, stirring continuously until the dough pulls away from the sides of the pan.

Incorporate Eggs
Remove the dough from heat and let it cool for a few minutes. Add 2 large eggs one at a time, mixing well after each addition until fully incorporated and the dough is smooth.

Pipe the Churros
Transfer the dough to a piping bag fitted with a large star tip. Once the oil is hot, pipe strips of dough directly into the hot oil, cutting them to your desired length with scissors.

Fry the Churros
Fry the churros for about 2-3 minutes on each side, or until golden brown and crispy. Remove them from the oil and drain on paper towels.

Dust with Sugar
In a shallow dish, mix 1 cup of granulated sugar with 1 teaspoon of ground cinnamon. Roll the warm churros in the cinnamon-sugar mixture until well coated.

Make the Sauce
In a small saucepan over medium heat, combine 1 cup of heavy cream and bring it to a simmer. Remove from heat and add 1 cup of semi-sweet chocolate chips and 1 teaspoon of vanilla extract, stirring until the chocolate is melted and the mixture is smooth.
