Prepare the Tortillas
Cut the corn tortillas into triangle shapes to create chips. You can cut each tortilla into 6 to 8 triangles.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches about 350°F (175°C). You can test the oil by dropping a small piece of tortilla into it; if it sizzles, the oil is ready.

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry until golden brown and crispy, about 2-3 minutes. Avoid overcrowding the pan.

Drain and Season
Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt to taste.

Mix the Ingredients
In a mixing bowl, combine the diced tomatoes, red onion, jalapeño pepper, and chopped fresh cilantro.

Add Lime and Season
Squeeze the juice of one lime over the salsa mixture and add salt to taste. Stir well to combine all ingredients.

Chill and Serve
Let the salsa sit for at least 15 minutes to allow the flavors to meld. Serve fresh with the crispy tortilla chips.
