    Prepare the Fish

    Dice the fresh white fish into small cubes (about 1/2 inch). Place the diced fish in a glass or ceramic bowl.

    Marinate the Fish

    Pour the fresh lime juice over the diced fish, ensuring that all pieces are completely submerged. Add salt and stir gently to combine. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to 1 hour, or until the fish appears opaque and 'cooked' in the lime juice.

Combining Ingredients

    Mix the Vegetables

    While the fish is marinating, finely chop the red onion, cilantro, and tomato. If using jalapeño, remove the seeds and finely chop it as well.

    Combine with Fish

    Once the fish is marinated, drain a little of the lime juice if desired. Add the chopped red onion, cilantro, tomato, and jalapeño (if using) to the bowl with the fish. Gently fold all the ingredients together until well combined.

Serving

    Serve the Ceviche

    Spoon the ceviche into small serving bowls or plates. Serve with tortilla chips or tostadas on the side for dipping. Enjoy immediately for the freshest flavor!
