Preheat the Oven
Preheat your wood-fired oven to a temperature of 425°F (220°C). If using a conventional oven, you can also set it to this temperature.

Prepare the Brussels Sprouts
Trim the stem ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut them in half lengthwise for even cooking.

Combine Ingredients
In a large mixing bowl, combine the halved Brussels sprouts, olive oil, salt, and black pepper. Toss until well coated.

Add Bacon and Cherries
Add the chopped bacon and dried tart cherries to the Brussels sprouts mixture. Toss to combine all ingredients evenly.

Roast the Brussels Sprouts
Spread the Brussels sprouts mixture in a single layer on a baking sheet. Roast in the preheated oven for about 25-30 minutes, or until the Brussels sprouts are tender and caramelized, stirring halfway through.

Add Parmesan
Once the Brussels sprouts are done roasting, remove them from the oven and sprinkle with grated Parmesan cheese. Toss gently to distribute the cheese evenly.

Transfer the roasted Brussels sprouts to a serving platter. Drizzle with Calabrian chili aioli before serving. Enjoy warm!
