    Chill the Glass

    Begin by chilling a rocks glass. You can do this by filling it with ice water and setting it aside while you prepare the cocktail.

    Prepare the Sugar

    In a separate mixing glass, add the turbinado sugar and 1 tsp of water. Stir until the sugar is dissolved completely.

    Add Bitters

    Add 2 dashes of Peychaud’s bitters into the mixing glass with the dissolved sugar. Stir again to combine.

    Incorporate Rye Whiskey

    Pour 2 oz of rye whiskey into the mixing glass and fill it with ice. Stir gently for about 30 seconds to chill the mixture.

Finishing Touches

    Prepare the Glass

    Empty the chilled rocks glass of ice water and rinse it with 1 tsp of Herbsaint. Swirl the Herbsaint around the glass to coat the inside, then discard any excess.

    Strain the Cocktail

    Using a strainer, pour the chilled cocktail mixture from the mixing glass into the prepared rocks glass.

    Garnish

    Express the oils from a lemon peel over the drink by twisting it, then drop it into the glass as a garnish.
