Method
Preparing the Kale

Wash and Prepare Kale
Rinse the kale thoroughly under cold water. Remove the tough stems and tear the leaves into bite-sized pieces. Place the kale in a large salad bowl.

Massage the Kale
Drizzle a small amount of olive oil and a pinch of salt over the kale. Using your hands, massage the kale for about 2-3 minutes until it becomes tender and darkens in color.
Making the Croutons

Prepare Garlic Butter
Melt the unsalted butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and let cool slightly.

Toast the Bread
Preheat the oven to 375°F (190°C). Cut the bread into cubes and place in a mixing bowl. Pour the garlic butter over the bread and toss to coat evenly.

Bake the Croutons
Spread the buttered bread cubes on a baking sheet in a single layer. Bake for 10-15 minutes, stirring halfway through, until golden brown and crispy.
Making the Dressing

In a blender, combine the juice of the lemon, olive oil, Dijon mustard, Worcestershire sauce, anchovy paste, salt, and black pepper. Blend until smooth and emulsified.
Assembling the Salad

Add the croutons and grated Parmesan cheese to the massaged kale. Drizzle the dressing over the top.
