Pistachio Pesto

In a food processor, combine the pistachios, basil leaves, garlic cloves, and parmesan cheese. Pulse until coarsely chopped.

Add Olive Oil and Season

With the processor running, slowly add the olive oil until the pesto reaches a smooth consistency. Add lemon juice and salt to taste, then pulse again to combine.

Set Aside

Transfer the pesto to a bowl and set aside.

Garlic Ricotta

Prepare the Garlic Ricotta

In a small bowl, combine ricotta cheese, minced garlic, olive oil, salt, and black pepper. Mix until smooth.

Cover the bowl and set aside for flavors to meld.

Curly Pepperoni

Prepare the Curly Pepperoni

If desired, cut each pepperoni slice into quarters to create curly shapes when baked.

Assembly

Assemble the Dish

On a serving platter or plate, spread a generous layer of garlic ricotta as the base.

Spread the pistachio pesto over the ricotta layer and sprinkle with mozzarella cheese.
