Dough Ingredients

Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water (1.5 cups) and honey (1 tbsp). Sprinkle active dry yeast (2 tsp) on top and let it sit for about 5-10 minutes until frothy.

  2. 2

    Mix Dry Ingredients

In a large mixing bowl, combine all-purpose flour (3 cups) and salt (1 tsp). Mix well.

  3. 3

    Combine Ingredients

Make a well in the center of the flour mixture. Add the activated yeast mixture and olive oil (2 tbsp).

  4. 4

    Knead the Dough

Mix until a dough forms. Transfer to a floured surface and knead for about 10 minutes until smooth and elastic.

  5. 5

    First Rise

Place the dough in a lightly oiled bowl, cover with a clean cloth, and let it rise in a warm area for about 1 hour or until doubled in size.

Pita Cooking

  1. 6

    Preheat the Oven

Preheat your wood-fired oven or conventional oven to 475°F (245°C).

  2. 7

    Shape the Pitas

Once the dough has risen, punch it down and divide it into 8 equal pieces. Shape each piece into a ball and then roll out into circles about 1/4 inch thick.

  3. 8

    Prepare for Baking

Place the rolled-out pitas on a floured surface and let them rest for about 10 minutes.

  4. 9

    Bake the Pitas

Transfer the pitas to the oven (or onto a pizza stone if using a wood-fired oven) and bake for about 3-5 minutes or until they puff up and get lightly golden.

  5. 10

    Add Toppings

Remove the pita from the oven and brush with olive oil (2 tbsp) while they are still warm. Sprinkle with sea salt and fresh herbs to taste.

  6. 11

    Serve

Serve warm and enjoy your wood-fired pitas with your favorite dips or fillings.
