    Prepare the Ragù

    In a large skillet, heat the olive oil over medium heat. Add the pancetta and sauté until crispy.

    Add Vegetables

    Add the chopped onion, carrot, and celery to the skillet. Cook until the vegetables are soft.

    Brown the Meat

    Add the ground beef and garlic to the skillet. Cook until browned.

    Add Wine and Tomatoes

    Pour in the red wine and let it reduce for a few minutes. Then add the crushed tomatoes and stir well.

    Simmer the Sauce

    Reduce the heat to low, add the milk, and let the sauce simmer for at least 30 minutes. Stir occasionally and season with salt and black pepper to taste.

    Cook the Tagliatelle

    In a large pot, bring salted water to a boil. Add the tagliatelle and cook according to package instructions until al dente. Drain and reserve some pasta water.

    Combine Pasta and Sauce

    Add the cooked tagliatelle to the ragù and toss to combine. If the sauce is too thick, add a bit of reserved pasta water.

    Serve

    Plate the tagliatelle and top with dollops of ricotta cheese. Sprinkle with grated Parmesan cheese and garnish with fresh basil.
