    Activate the Yeast

    In a small bowl, combine warm water (about 110°F/43°C) with the active dry yeast and let it sit for about 5-10 minutes until it becomes frothy.

    Mix the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and add the activated yeast mixture, along with the olive oil. Stir with a wooden spoon until the dough begins to come together.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 10 minutes until smooth and elastic. The dough will be slightly sticky.

    First Rise

    Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

    Shape the Loaves

    After the first rise, gently punch down the dough and turn it onto a floured surface. Divide it into two equal parts and shape each part into a rustic loaf. Place on a baking sheet lined with parchment paper.

    Cover the shaped loaves with a damp cloth and let them rise again for about 30-45 minutes.

    Preheat your oven to 450°F (232°C) while the loaves are rising.

    Once the loaves have risen, bake them in the preheated oven for about 25-30 minutes, or until the crust is golden brown and sounds hollow when tapped.
