    Prepare the Pea Puree

    In a pot, bring water to a boil and add the English peas. Cook for about 2-3 minutes until tender. Drain and transfer to a blender.

    Blend the Pea Puree

    Add a tablespoon of olive oil and a pinch of salt to the peas in the blender. Blend until smooth and set aside.

    Make the Basil Oil

    In a small saucepan, heat 1/4 cup of olive oil over low heat. Add the fresh basil and let it infuse for about 5 minutes. Remove from heat and strain the oil into a bowl.

    Cook the Green Beans

    In the same pot used for the peas, bring water to a boil again and add the green beans. Cook for 4-5 minutes until bright green and tender-crisp. Drain and set aside.

    Sear the Halibut

    Season the halibut fillets with salt and black pepper. In a large skillet, heat the remaining olive oil over medium-high heat. Add the halibut fillets and cook for about 4-5 minutes on each side until golden brown and cooked through.

    Plate the Dish

    On each plate, spread a generous amount of the pea puree. Top with a seared halibut fillet, drape with basil oil, and arrange green beans alongside.

    Finish with Lemon

    Drizzle lemon juice over the top before serving.
