    Make the Filling

    In a mixing bowl, combine the cooked lobster meat, ricotta cheese, and a pinch of salt and pepper. Mix well and set aside.

    Prepare the Ravioli

    On a clean surface, lay out a pasta sheet. Place a tablespoon of the lobster filling in the center. Brush the edges of the pasta sheet with water and place another sheet on top. Press down to seal the edges. Cut out ravioli using a cutter or knife. Repeat until all filling is used.

    Cook the Ravioli

    In a large pot, bring salted water to a boil. Carefully drop in the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon and set aside.

    Make the Vodka Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes. Pour in vodka and let it reduce by half. Stir in crushed tomatoes, salt, and black pepper. Simmer for 10 minutes. Add heavy cream and simmer for another 5 minutes until thickened.

    Combine and Serve

    Toss the cooked ravioli gently in the vodka sauce. Serve hot, garnished with grated Grana Padano and fresh basil.
