    Prepare the Chicken

    Season the chicken thighs with salt and black pepper. Dredge each piece in flour, dip in beaten eggs, and coat with bread crumbs. Set aside.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the chicken and fry until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside on a paper towel-lined plate.

    Make the Vodka Sauce

    In the same skillet, lower the heat and add the vodka carefully. Let it simmer for a minute to reduce slightly. Stir in the heavy cream and add crushed red pepper flakes. Cook for 3-4 minutes until the sauce thickens.

    Stir in the spinach, Parmesan, and Fontina cheeses. Cook until the spinach wilts and the cheeses melt into the sauce.
