    Make the Cannolo Shells

    In a large bowl, mix the flour, cocoa powder, sugar, and salt together. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg yolks and wine until a dough forms. Knead the dough on a floured surface until smooth, about 5 minutes. Wrap in plastic wrap and refrigerate for at least 1 hour.

    Roll and Cut the Dough

    On a floured surface, roll the dough out to about 1/8-inch thick. Cut into circles of about 4 inches in diameter.

    Fry the Shells

    Heat oil in a deep pan to 350°F (175°C). Wrap each circle around a metal cannoli tube, sealing the edges with a bit of water. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

    Prepare the Ricotta Filling

    In a medium bowl, mix the ricotta, powdered sugar, vanilla extract, chocolate chips, and orange zest until smooth.

    Fill the Cannoli

    Once the shells are cool, carefully remove them from the tubes. Fill a piping bag with the ricotta mixture and pipe it into each shell from both ends.
