    Make the Dough

    In a large mixing bowl, combine flour, sugar, yeast, and salt. In a separate bowl, warm the milk and melt the butter together. Beat in the eggs, then add to the dry ingredients. Mix until a dough forms.

    Knead the Dough

    Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

    Make the Ganache

    In a saucepan, heat the heavy cream until just simmering, then pour over the chopped chocolate. Stir until smooth and let cool slightly.

    Shape the Bombolone

    Once the dough has risen, punch it down and roll it out to about 1/2 inch thick. Cut out circles using a doughnut cutter. Let the circles rise for another 30 minutes.

    Fry the Doughnuts

    Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the doughnuts in batches for about 2-3 minutes on each side until golden brown. Remove and drain on paper towels.

    Fill the Bombolone

    Using a piping bag, fill the fried doughnuts with espresso ganache and Nutella. Roll in sugar if desired.

    Top with toasted hazelnuts and serve warm.
